Malts / extract:
Simple but fluffy. A decent mix of barley, wheat malt and flaked oats.
Hops:
Into this beer we add just a little bit of German Hersbrucker hops.
Bacteria:
This beer was kettle soured with our house Lactobacillus strain. We let the bacteria work
overnight to low the final pH of the beer just before boiling.
Additives:
Insane (like for real, a lot) amounts of tart raspberry and sweet Blackberry purees. We left a bit
more of fruit in suspension that in our regular Berliner Weisse this time to keep a bit more of
a thick and smooth body.
Vanilla:
Aging with the best quality Madagascar vanilla beans complements the dessert character of this
beer, increasing a bit the perception of sweetness and combines well with its fruity character.
