When the Man came down from the tree, he realized that he could cut it down now. This, in short, could have begun the history of man’s rule over nature – don’t you think? A sufficiently large brain allows me to use nature, but at the same time does not understand that it is itself a dependent part of it. Typical for Homo sapiens.

Bad climate

And this year… another winter without snow. Do you also feel a little excited that we live in conditions that even the oldest highlanders do not remember? But then I read that it’s a climate catastrophe and that it’s also because of me. I keep reading and phew, there are also those who say it’s not my fault after all. I would like to believe them, but the heat gave me a headache.

The future in the stars

When I lie on the grass on a hot summer night and look at the stars, I feel an unusual connection with my planet and the space. After another sip it becomes clear to me that if any balance has been disturbed, it is rather the one at the ground. Have you noticed any disturbing changes on Earth recently? It`s a sour beer style derived from Goslar in Germany. In its production process, salt and coriander were traditionally used to obtain fulness, delicate minerality and spiciness. Modern brewing went a step further and set a new way by adding fruits to the traditional GOSE base. Amazingly aromatic, juicy, sour beer with full body and smooth texture!

 

SALAMANDER Mango & Guava Gose

Gose is a sour beer style derived from Goslar in Germany. In its production process salt and coriander were traditionally used to obtain fulness, delicate minerality and spiciness. Modern brewing went a step further and set a new path by adding fruits to the traditional GOSE base. Amazingly aromatic, juicy, sour beer with full body and smooth texture – perfect for summer days & nights!

Malts:

It`s a session beer, which means that it`ll work well during long summer evenings and also as a daily beer for fruity beer lovers. We`ve used a barley and wheat malts as a base and add wheat flakes to give a smooth structure and fullness.

Hops:

Hops are not playing an important role in this beer. We`ve used german Chinook to add a small hint of bitterness.

Fruits:

In the foreground in this beer is the composition of fruits. Mango, mango and… more mango with guava at the finish. Thick purées allowed to obtain the structure of fruit nectar, which is complemented by delicate minerality and acidity.

  • Słody: barley malt (Pils), oat malt, wheat flakes
  • Hops:
    • Aromatic: Chinook
  • Yeasts:House Ale strain
  • Purees: mango & pink guava puree
  • Appearance: deep orange, hazy
  • Aromas: ripe mango, peppery derived by pink guava fruits and subtle malt aromas
  • Mouthfeel:
    • 1 – smooth, mineral & tropical
    • 2 – sour, peppery
    • 3 – sweet/malty finish
  • Serving temperature: 9-12⁰C
  • Glass: Shaker, Ale Glass
  • Foodpairing:
    • Dishes: poultry livers with sour peach, butter bun burger with grilled halloumi cheese and mango salsa 
    • Cheese: ricotta, mascarpone
    • Dessert: cold cheesecake with tropical fruit mousse, peach crumble, crepes suzette
