Berliner Weisse is a sour wheat beer style originating from the Berlin area, where it was once highly regarded as a gentle and sessionable everyday beer. However, the expansion of pale lager led to the demise of most breweries producing it. Fortunately, as the taste for true craftsmanship began to gain importance in the beer world, Berliner Weisse saw its renaissance and to this day is referred to in all cases. Its basic version is characterized by low alcohol content and high acidity and is often enriched with seasonal fruits which result in fuller body and greater juiciness.
In our next installment of this style, we have prepared for you an enhanced version of this beer in the DOUBLE version – doubly fruity, sour and refreshing with a pale orange color and filled to the brim with intense aromas of citrus, candy, grass and lychee.
Malts / extract:
18⁰Plato provides a solid foundation for this beer. This is a double version, so the initial extract is twice as high as in our standard Berliner Weisse beers. The base consist of barley malt and wheat malt. Flakes are also an important element, making up a large part of the malt base and contributing to the right texture and providing a balance between maltiness and acidity.
Hops:
They play a tertiary role in this beer. We used only the German Tetnanger hop variety to impart a mild bitterness.
Yeast:
Home grown top fermentation strain with a rich ester profile.
Fruits:
We used whole fruit in pureed form to bring out maximum flavor and aroma. Guava is already kind of a classic at our brewery that we love to use when making all kinds of fruity beers. It adds a touch of sweetness and complements the beer with a wide range of tropical aromas along with subtle notes of white pepper, melon or fresh green cucumber. Papaya, on the other hand, has a refreshing effect, highlights the melon notes and perfectly combines with the sour character of the beer, thus giving it even more lightness and a sweet “aftertaste”!
In this beer you can feel their addition and structure in a fully authentic and natural way also thanks to the special production technique. Do you like smoothies? Well, we have changed the parameters during the centrifugation (separation of the fruit) to leave the fruit particles in the beer and to give it even more refreshing power!
