Style

Double Dry Hopped DIPA, or the recent trend showing quite an innovative take on the DIPA style. The beer is slightly sweeter, less strong and focused on producing the hoppy aroma not necessarily on bitter tones. The beer brings to mind fruit juices for it cloudiness and the fact that it tastes best when drunk fresh. It’s been aged with an impressive abundance of grapefruit and mandarin peels.

Malts/extract:

Although it’s part of the stronger styles of the IPA family, the alcohol content in this brew is moderate so as to highlight the beer’s malty, even sweet, base. At the same time, wheat malts and oat flakes account for the beer’s smooth texture and slight cloudiness.

Hops:

There’s a lot going on! Huge amounts of hops have been added at all production stages. The unusual thing is not to add any hops at the early brewing stages. Instead, all hops have been added to produce the unique aroma. So what we did was to pack our Whirlpool with hops which allows for capturing the aroma and flavour of our favourite plant. At this stage we have used citric hops – aromatic Cascade, Simco and Citra. The brew has been hopped twice with the use of HopGun, once during the fermentation process and second during the ageing phase. Here the tropic hop varieties have been added – Mosaic and Amarillo.

Ingredients:

This intensely aromatic beer has been enriched with an impressive amount of freshly grated peels of citrus fruit. Just before being added to the HopGun, we have grated loads of grapefruits and mandarins to keep them as fresh as possible. We have squeezed super fresh and aromatic fruit juice. First, we extracted ether oils and separated them from the beer to avoid excessive bitterness. The final outcome is mind-blowing! What an intensely citric aroma and flavour!
