Stir in chopped carrots, celery, garlic, onion and spices. Simmer for about 15 minutes. Add flour and stir for about 1 minute. Add chicken broth and mustard. Cook for about 15 minutes. Add beer and use a blender for a smooth texture. Stir in cheese and heat until melted.
