Beer-and-cheese soup

For starters, beer-and-cheese soup

 

Here is the promised first recipe of Browar Stu Mostów by Piotr Kucharski.

 

Ingredients:

  • 3 tablespoons of butter
  • 2 carrots
  • 2 celery stalks
  • 2 cloves of garlic
  • 1 small onion
  • a dash of cayenne pepper
  • salt and pepper
  • 3 tablespoons of wheat flour
  • 1.5 cups of chicken broth
  • 2 teaspoons of Dijon mustard
  • 1 bottle of Pale Ale
  • 250 g or 1⁄2 lb of Old Poland Rubin cheese
  • 4 spears of green asparagus

 

Directions:

 

Heat butter in a large saucepan. Stir in chopped carrots, celery, garlic, onion and spices. Simmer for about 15 minutes. Add flour and stir for about 1 minute. Add chicken broth and mustard. Cook for about 15 minutes. Add beer and use a blender for a smooth texture. Stir in cheese and heat until melted. Serve the soup topped with thin slices of asparagus.
